Delicious Coffee Cupcakes With Cake Mix
Ingredients
One box of your favorite cake mix. For this recipe, I used a vanilla cake mix, but you can use any flavor you like. This recipe will work with either regular or gluten-free cake mix.
3 large eggs
1 cup of brewed coffee, cooled to room temperature
1/3 cup of vegetable oil
1/2 cup of semi-sweet chocolate chips, melted
1 cup of heavy cream
2 tablespoons of sugar
1 teaspoon of vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and prepare a cupcake pan with cupcake liners.
In a medium bowl, mix together the cake mix, eggs, coffee, and oil until combined. The batter should be thick and smooth.
Fill each cupcake liner with the batter, about 2/3 full. Place the pan in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
Remove the cupcakes from the oven and allow to cool for 10 minutes before transferring to a wire cooling rack.
While the cupcakes are cooling, prepare the frosting. In a medium bowl, combine the melted chocolate chips, cream, sugar, and vanilla extract. Beat with an electric mixer until the mixture is light and fluffy.
Once the cupcakes are completely cooled, spread the frosting on top of each cupcake. Sprinkle with cocoa powder or chocolate shavings, if desired.
