Ingredients
- 1/2 cup plus 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup Dutch-process cocoa powder
- 1/4 cup plus 2 tablespoons vegetable oil
- 1/4 cup plus 2 tablespoons canola oil
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup plus 2 tablespoons milk
- 1/4 cup plus 2 tablespoons sour cream
- 2 teaspoons vanilla extract
- 1/2 cup heavy cream
- 1/2 cup semisweet chocolate chips
Instructions
Step 1: Make the Cake
Preheat the oven to 350°F and line two 8-inch round cake pans with parchment paper. In a medium bowl, sift together the flour, baking powder, baking soda, salt, and cocoa powder. In a large bowl, whisk together the vegetable oil, canola oil, granulated sugar, eggs, milk, sour cream, and vanilla extract until completely combined. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Divide the batter evenly between the cake pans and bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before turning out onto a wire rack to cool completely.
Step 2: Make the Ganache
In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from the heat and add the chocolate chips. Let sit for 5 minutes before stirring with a rubber spatula until completely smooth. Let the ganache cool to room temperature before using.
Step 3: Assemble the Cake
Place one cake layer on a cake stand or serving plate. Spread a layer of ganache on top. Place the second cake layer on top of the first and spread another layer of ganache on top. Refrigerate for 20 minutes or until the ganache is firm.
Step 4: Frost the Cake
In a medium bowl, stir together 1/2 cup of the remaining ganache and 2 tablespoons of the remaining heavy cream until completely combined. Use an offset spatula to spread the frosting over the top and sides of the cake. Refrigerate for 20 minutes or until the frosting is firm.
Step 5: Decorate the Cake
Melt the remaining ganache in the microwave in 30 second intervals, stirring after each interval, until completely melted and smooth. Use a spoon to drizzle the melted ganache over the top of the cake. Serve immediately or store in the refrigerator for up to 3 days.
