Ingredients



For the Shell:

- 2 cups of all-purpose flour
- 1/2 teaspoon of salt
- 1/3 cup of white sugar

- 1/2 teaspoon of ground cinnamon
- 2 large eggs

For the Filling:

- 2 pounds of ricotta cheese
- 1/2 cup of white sugar
- 2 teaspoons of grated orange zest
- 1/4 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/4 cup of mini semi-sweet chocolate chips
- 1/4 cup of chopped pistachios
- 1/4 cup of chopped almonds
- 1/4 cup of chopped hazelnuts

Instructions



1. To make the shell, mix the all-purpose flour, salt, and white sugar in a large bowl. Cut in the butter until the mixture resembles coarse crumbs. Add the Marsala wine, oil, and cinnamon, and mix until a soft dough forms. Wrap the dough in plastic wrap and let it rest in the refrigerator for an hour.

2. Preheat the oven to 350°F.

3. Remove the dough from the refrigerator and roll it out on a lightly floured surface until it is 1/8 inch thick. Cut out 6-inch circles using a cookie cutter or a glass. Place the circles on a baking sheet lined with parchment paper and brush with the beaten eggs. Bake for 20 minutes until golden brown. Let the shells cool before filling.

4. To make the filling, mix the ricotta cheese, sugar, orange zest, cinnamon, and nutmeg in a large bowl. Fold in the mini semi-sweet chocolate chips, pistachios, almonds, and hazelnuts.

5. To assemble the cannoli, spoon the filling into a pastry bag fitted with a star tip and pipe the filling into the cooled shells. Top with chopped nuts if desired. Serve immediately or store in an airtight container in the refrigerator for up to two days.
