Ingredients

This recipe is sure to please any coffee and walnut cake lover. To make it you will need: 225g of softened unsalted butter, 225g of light muscovado sugar, 4 large eggs, 225g of self-raising flour, 1 teaspoon of baking powder, 1 teaspoon of ground cinnamon, 50g of ground walnuts, 1 teaspoon of strong instant coffee dissolved in 2 tablespoons of boiling water and 25g of chopped walnuts.

Instructions

To make this delicious cake, preheat your oven to 180°C/350°F/Gas Mark 4. Grease and line a 20cm/8in round cake tin and set aside. In a large bowl, cream together the butter and sugar until light and fluffy. Then beat in the eggs one at a time until well combined. Add the flour, baking powder and cinnamon and mix until combined. Finally, fold in the ground walnuts, coffee and water mixture and chopped walnuts.

Spoon the mixture into the prepared cake tin and bake for 40-45 minutes, or until a skewer inserted into the centre of the cake comes out clean. Leave the cake to cool in the tin for 10 minutes before turning it out onto a wire rack to cool completely.

Serving Suggestions

This coffee and walnut cake is delicious served with a dollop of softly whipped cream or a scoop of vanilla ice cream. Alternatively, you can enjoy it plain or spread with a generous layer of buttercream. To store, wrap the cake in clingfilm and keep in an airtight container for up to 3 days.

Variations

For a chocolate twist on this classic cake, try adding a tablespoon of cocoa powder to the mixture along with the ground walnuts and chopped walnuts. You can also switch out the ground cinnamon for a teaspoon of ground ginger if you prefer, or a teaspoon of mixed spice for a more festive flavour.
