Ingredients:

  • 3 large eggs, separated
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 1/2 cup butter, melted and cooled
  • 1/2 cup confectioners’ sugar
  • Filling of your choice (jam, cream cheese, etc.)

Instructions:

Cake Roll:

Preheat the oven to 375°F (190°C). Line a 10x15-inch (25x38 cm) baking sheet with parchment paper. Grease the parchment paper with butter and set aside.

In a large bowl, beat the egg whites with an electric mixer until foamy. Add the cream of tartar and continue to beat until stiff peaks form. Gradually add the granulated sugar and continue to beat until stiff peaks form. Add the egg yolks one at a time, beating until combined. Beat in the vanilla extract.

In a separate bowl, whisk together the flour, salt, and melted butter. Add the dry ingredients to the egg mixture and gently fold until combined. Spread the batter onto the prepared baking sheet, spreading it into an even layer. Bake for 10-12 minutes or until the cake is lightly golden. Remove from the oven and let cool completely.

Once the cake is cooled, sprinkle the confectioners’ sugar over the top of the cake. Place a clean kitchen towel over the cake and carefully turn it over onto the towel. Gently peel away the parchment paper and sprinkle more confectioners’ sugar over the cake. Using the kitchen towel, carefully roll the cake up, starting from the short side. Place the rolled cake on a wire rack to cool completely.

Filling:

Once the cake has cooled, you can add your desired filling. You can use a variety of fillings such as jam, cream cheese, custard, or any other filling of your choice. Spread the filling over the cake, leaving a 1-inch (2.5 cm) border around the edges. Gently roll the cake up, using the kitchen towel to help you roll it tightly. Place the cake roll on a serving platter and dust with confectioners’ sugar before serving.
