- 1/2 cup cooked prosciutto, diced
- 1/2 cup chopped bell peppers
- 1/2 cup diced mushrooms
- 1/2 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup grated mozzarella cheese
- 2 eggs, beaten
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh oregano
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup all-purpose flour
- 1/2 cup semolina flour
- 1/2 teaspoon baking powder
- 1/4 cup plus 2 tablespoons cold butter, cut into small cubes
- 1/4 cup cold water
- 1 egg, beaten for the egg wash
- 1/4 cup grated Parmesan cheese for topping
Instructions
Step 1: Prepare the Filling
In a large sauté pan, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is soft, about 5 minutes. Add the sausage, ham, salami, prosciutto, bell peppers, and mushrooms and cook until the vegetables are soft, about 10 minutes. Remove the pan from the heat and let cool.
In a large bowl, combine the cooled vegetables with the ricotta, Parmesan, mozzarella, eggs, parsley, oregano, salt, and pepper and mix until combined. Set aside.
