  • 1 tablespoon extra-virgin olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup cooked Italian sausage, crumbled
  • 1/2 cup cooked ham, diced
  • 1/2 cup cooked salami, diced
  • 1/2 cup cooked prosciutto, diced
  • 1/2 cup chopped bell peppers
  • 1/2 cup diced mushrooms
  • 1/2 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated mozzarella cheese
  • 2 eggs, beaten
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup all-purpose flour
  • 1/2 cup semolina flour
  • 1/2 teaspoon baking powder
  • 1/4 cup plus 2 tablespoons cold butter, cut into small cubes
  • 1/4 cup cold water
  • 1 egg, beaten for the egg wash
  • 1/4 cup grated Parmesan cheese for topping

Instructions

Step 1: Prepare the Filling



In a large sauté pan, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is soft, about 5 minutes. Add the sausage, ham, salami, prosciutto, bell peppers, and mushrooms and cook until the vegetables are soft, about 10 minutes. Remove the pan from the heat and let cool.

In a large bowl, combine the cooled vegetables with the ricotta, Parmesan, mozzarella, eggs, parsley, oregano, salt, and pepper and mix until combined. Set aside.

Step 2: Make the Dough



In a medium bowl, whisk together the all-purpose flour, semolina flour, baking powder, and salt. Add the butter and use your fingers to work the butter into the flour until it resembles coarse meal. Make a well in the center of the flour mixture and add the water. Use a wooden spoon to stir until a ball of dough forms.

Turn the dough out onto a lightly floured surface and knead until it is smooth and elastic, about 5 minutes. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Step 3: Assemble the Pizza Rustica



Preheat the oven to 375 degrees F. Grease a 9-inch tart pan with olive oil.

On a lightly floured surface, roll the dough out into a circle that is slightly larger than the tart pan. Transfer the dough to the tart pan and press it into the bottom and up the sides. Trim any excess dough.
