Ingredients
• 2 cups all-purpose flour • ¾ teaspoon baking powder • ¼ teaspoon baking soda • ½ teaspoon salt • 1 cup granulated sugar • ½ cup (1 stick) butter, softened • 2 large eggs • 1 teaspoon vanilla extract • 1 teaspoon finely grated fresh ginger • 2 tablespoons lemon zest • ¾ cup buttermilk • For glaze: • 3 tablespoons freshly squeezed lemon juice • 1 cup powdered sugar
Instructions
1. Preheat oven to 350°F. Grease and flour a 12-cup Bundt pan. 2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. 3. In a separate bowl, beat together the butter and sugar until light and fluffy. 4. Add the eggs one at a time, beating well after each addition. 5. Add the vanilla extract, ginger, and lemon zest and mix until blended. 6. Alternately add the flour mixture and the buttermilk, beginning and ending with the flour. 7. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. 8. Allow the cake to cool in the pan for 10 minutes before inverting onto a wire rack to cool completely. 9. To make the glaze, whisk together the lemon juice and powdered sugar until smooth. 10. Drizzle the glaze over the cooled cake.
