Instructions

  1. Preheat oven to 325°F (165°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  4. Add the dried fruit mix, brandy or orange juice, walnuts or pecans, candied peel, slivered almonds, candied cherries, mixed candied fruits, golden syrup, and brown sugar to the butter and sugar mixture. Mix until everything is well combined.
