Coconut Cake Roll Recipe

Ingredients
- 4 large eggs, separated
- 3/4 cup all-purpose flour

Instructions
Cake Roll
Preheat your oven to 375 degrees. Grease a 15x10-inch jelly-roll pan with butter and line the bottom with parchment paper. Grease the parchment paper, and lightly sprinkle with flour. Set aside.
In a medium bowl, whisk together the egg yolks, salt, and 1/2 cup of the granulated sugar. Stir in the vanilla and 1/4 cup of the coconut. Set aside.
In a separate bowl, beat the egg whites until foamy. Gradually add the remaining 1/4 cup of granulated sugar, and beat until the whites are stiff and glossy. Gently fold the egg whites into the egg yolk mixture.
Sift the flour into the egg mixture and fold in until just combined. Spread the batter evenly into the prepared pan. Bake for 12-15 minutes, or until the cake is golden and springs back when lightly touched.
Remove the cake from the oven and immediately turn it out onto a clean kitchen towel that has been sprinkled with confectioners’ sugar. Carefully peel off the parchment paper. Starting at one of the short ends, roll the cake in the towel. Set aside to cool completely.
Coconut Filling
In a medium bowl, beat the whipping cream until soft peaks form. Add the remaining 1/4 cup of coconut and the confectioners’ sugar. Beat until stiff peaks form. Unroll the cake and spread the coconut filling evenly over the cake. Roll the cake back up and wrap in plastic wrap. Refrigerate for at least 1 hour before serving.
