Classic French Gâteau Basque Cake

One of the most beloved French cakes is the Gâteau Basque. It is an almond-flavored cake filled with a thick layer of sweet pastry cream. The cake is said to have originated in the Basque region of France, but it has become popular all over the country. This cake is perfect for special occasions, but it is also a great treat to enjoy with coffee or tea.

Ingredients:

For the pastry dough:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup sugar
  • 1 teaspoon salt
  • 1/2 cup cold butter, cut into cubes
  • 1/2 cup plus 3 tablespoons cold water

For the filling:

  • 2 cups whole milk
  • 4 egg yolks
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, cut into cubes

Instructions:

To make the pastry dough, combine the flour, baking powder, sugar, and salt in a bowl. Add in the butter and mix with a pastry blender or your hands until the mixture is crumbly. Add in the water, 1 tablespoon at a time, until a dough forms. Form the dough into a disc and wrap in plastic wrap. Refrigerate for at least 30 minutes.

To make the pastry cream, heat the milk in a saucepan over medium heat until it is just simmering. In a separate bowl, whisk together the egg yolks, sugar, cornstarch, and vanilla until it is light and fluffy. Slowly add the hot milk to the egg mixture, whisking constantly, until it is combined. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens. Remove from the heat and add in the butter, stirring until it is completely melted and incorporated. Allow the pastry cream to cool completely before using.

To assemble the cake, preheat the oven to 375°F. Grease a 9-inch round cake pan and set aside. On a lightly floured surface, roll out the pastry dough to a 12-inch circle. Place the dough in the cake pan and trim the excess. Spread the pastry cream over the dough, leaving a 1-inch border. Roll out the remaining dough to a 10-inch circle and place on top of the filling. Pinch the edges together and trim the excess dough. Bake for 30 minutes, or until the top is golden brown. Allow to cool before serving.
