Ingredients

For the cake:

- 2 1/2 cups cake flour

- 1 tablespoon baking powder

- 1/2 teaspoon baking soda

- 1 teaspoon salt

- 1 cup buttermilk

- 2 teaspoons vanilla extract

- 1 1/2 cups (3 sticks) unsalted butter, softened

- 2 cups granulated sugar

- 4 large eggs, at room temperature

- 1/4 teaspoon almond extract (optional)

For the frosting:

- 2 (8-ounce) packages cream cheese, softened

- 1/2 cup (1 stick) unsalted butter, softened

- 2 teaspoons vanilla extract

- 4 cups confectioners’ sugar

- 1/4 teaspoon salt

- 2 tablespoons heavy cream (optional)

Instructions

To make the cake:

1. Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans. Set aside.

2. In a medium bowl, whisk together the cake flour, baking powder, baking soda, and salt. Set aside.

3. In a small bowl, mix together the buttermilk and vanilla extract. Set aside.

4. In a large bowl, beat the butter and sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating until combined. Beat in the almond extract, if using.

5. Add the dry ingredients in three additions, alternating with the wet ingredients in two additions. Begin and end with the dry ingredients. Beat until just combined.

6. Divide the batter evenly between the prepared cake pans. Smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely before frosting.

To make the frosting:

1. In a large bowl, beat the cream cheese and butter until light and fluffy, about 3 minutes. Beat in the vanilla extract.

2. Add the confectioners’ sugar and salt and beat until combined. If the frosting is too thick, add heavy cream, one tablespoon at a time, until desired consistency is reached.

To assemble:

1. Place one cake layer on a cake stand or serving plate. Spread about one-third of the frosting over the top of the cake. Top with the second cake layer and spread the remaining frosting over the top and sides of the cake. Slice and serve.
