Christmas Cake Recipe 1Kg Fruit

Instructions
Now that you have all the ingredients, it’s time to get started on making this delicious Christmas cake!
- Preheat the oven to 150°C/300°F/Gas Mark 2.
- In a large bowl, mix together the butter, mixed spice, cocoa powder, cinnamon, ginger, baking powder, baking soda, salt and condensed milk until everything is well combined.
- Add the eggs and mix until everything is creamy and well combined.
- Stir in the flour and mix until everything is well combined and you have a firm dough.
- Fold in the dried fruits and mix until everything is well combined.
- Pour the mixture into a greased and lined 1kg cake tin.
- Bake in the preheated oven for 1 1/2 to 2 hours or until a skewer inserted into the centre comes out clean.
- Remove from the oven and leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
- Once cooled, drizzle with the brandy or whiskey and enjoy!
