For the filling:

  • 1/2 cup (110 grams) butter, at room temperature
  • 1 cup (200 grams) granulated sugar
  • 1/4 cup (30 grams) cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 cup (60 ml) milk or cream
  • 2 cups (240 grams) confectioners’ sugar

Instructions

For the cake:

  • Preheat oven to 350°F (175°C). Grease two 9-inch (23 cm) round cake pans and line the bottoms with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar on medium speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, mixing until just combined after each addition.
  • Add the vanilla extract and mix to combine.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder and salt. With the mixer on low speed, add the dry ingredients to the butter mixture, alternating with the sour cream and hot water, and mixing until just combined after each addition.
  • Divide the batter between the prepared pans, and bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Remove the cakes from the oven and let cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.

For the filling:

  • In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar on medium speed until light and fluffy, about 3 minutes.
  • Add the cocoa powder, vanilla extract, and milk or cream and mix to combine.
  • Add the confectioners’ sugar and mix on low speed until combined. Increase the speed to medium-high and mix until light and fluffy, about 3 minutes.
  • Spread the filling between the two cake layers and stack them on top of each other.
  • Smooth the sides of the cake with a spatula or an offset spatula. Refrigerate until ready to serve.
