- 1 teaspoon salt
- 1 cup milk
- ½ cup vegetable oil

For the glace cherry filling:
- 1 cup glace cherries, chopped
- 1 cup sugar
- ½ cup water
- 3 tablespoons cornstarch
- 1 teaspoon almond extract
For the frosting:
- 1 cup butter, softened
- 4 cups confectioners’ sugar
- ¾ cup cocoa powder
- 4-6 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
Making the Cake
Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.
In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix together until combined.
In a separate bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract. Add the wet ingredients to the dry ingredients and mix together until just combined. Be careful not to overmix.
Divide the batter between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
Making the Glace Cherry Filling
In a medium saucepan over medium heat, combine the chopped glace cherries, sugar, water, and cornstarch. Stir together and bring to a boil, stirring often. Reduce the heat and simmer for 5-7 minutes, or until thickened.
Once the filling is thickened, remove from the heat and stir in the almond extract. Let the filling cool completely before using.
Making the Frosting
In a large bowl, beat together the butter and confectioners’ sugar until light and fluffy. Add the cocoa powder, milk, and vanilla extract and beat until combined. The frosting should be thick and spreadable.
Assembling the Cake
On a cake stand or serving platter, place one of the cooled cake layers. Spread the cooled glace cherry filling over the top of the cake. Place the second cake layer on top.
Spread the frosting over the top and sides of the cake. Decorate the cake with additional glace cherries, if desired.
Serve the cake immediately or store in an airtight container in the refrigerator for up to 3 days.
