Christmas is a special time of the year where everyone comes together to celebrate. What better way to celebrate than with a festive layer cake? This Christmas layer cake recipe is sure to please everyone. It’s moist, flavorful and festive!

Ingredients

For the cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup buttermilk
  • Red and green food coloring

For the frosting:
  • 2 cups (4 sticks) unsalted butter, at room temperature
  • 2 tablespoons pure vanilla extract
  • 6 to 8 cups confectioners' sugar
  • 1/2 cup heavy cream
  • Red and green food coloring

Instructions

Step 1: Preheat oven to 350 degrees F. Grease two 9-inch round cake pans with butter and line the bottoms with parchment paper. Set aside.

Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.

Step 3: In a large bowl, beat the butter and sugar with an electric mixer until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. Add the vanilla and beat until combined. With the mixer on low speed, add the flour mixture in three additions, alternating with the buttermilk, beginning and ending with the flour mixture. Beat just until combined. Divide the batter evenly between two bowls and stir in red food coloring into one bowl and green food coloring into the other.

Step 4: Spread the batter in the prepared pans and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 15 minutes before turning out onto a wire rack to cool completely.

Step 5: To make the frosting, beat the butter in a large bowl with an electric mixer until light and fluffy. Add the vanilla and beat until combined. With the mixer on low speed, add the confectioners' sugar, one cup at a time, until the frosting is thick and spreadable. Beat in the cream until combined. Divide the frosting into two bowls and stir in red food coloring into one bowl and green food coloring into the other.

Step 6: To assemble the cake, place one layer on a cake platter. Spread a thin layer of red frosting on top of the layer. Top with the other layer of the cake and spread a thin layer of green frosting on top. Spread the remaining red and green frosting around the sides. Decorate with sprinkles or other festive decorations, if desired.
