Christmas Black Fruit Cake Recipe
Christmas is a time for joy, celebration and of course, delicious food! This Christmas, why not make a classic black fruit cake? It’s a traditional holiday favorite with a rich, dense cake and a variety of festive fruits. This recipe is easy to make and sure to be a crowd-pleaser!
Ingredients
- 2 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 1 teaspoon of ground cinnamon
- 1 teaspoon of ground nutmeg
- 1/4 teaspoon of ground cloves
- 1/2 teaspoon of salt
- 1/2 cup of butter (softened)
- 1 cup of dark brown sugar
- 2 large eggs
- 1 teaspoon of vanilla extract
- 1 cup of buttermilk
- 1 1/2 cups of mixed dried fruit (raisins, currants, candied cherries, etc)
- 1/2 cup of chopped nuts (walnuts, pecans, etc)
- 1/4 cup of brandy
Instructions
Preheat the Oven
Preheat the oven to 325 degrees Fahrenheit (160 degrees Celsius). Grease and flour a 9-inch round cake pan. Set aside.
Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt. Set aside.
Cream the Butter and Sugar
In a large bowl, cream together the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Then, beat in the vanilla extract.
Combine the Wet and Dry Ingredients
Add the dry ingredients to the wet ingredients in two batches, alternately with the buttermilk. Beat until just combined.
Mix in the Fruits and Nuts
Gently fold in the dried fruits and nuts. Pour the batter into the prepared cake pan and bake for about 1 hour and 15 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely.
Brandy Syrup
Once the cake has cooled, make the brandy syrup. In a small saucepan, bring 1/4 cup of brandy to a boil. Reduce heat to low and simmer for 5 minutes. Brush the syrup over the cake while it is still warm.
