Ingredients

For the cake:

  • 2 cups all-purpose flour

Instructions

Cake

Preheat the oven to 350°F. Grease two 8-inch round cake pans with butter and line the bottom of each pan with a round of parchment paper. Grease the parchment paper.

In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add the eggs, oil, and vanilla extract and mix until combined. Slowly add the hot coffee and mix until smooth. Divide the batter between the two prepared pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

Frosting

In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium speed until light and fluffy, about 3 minutes. Add the melted and cooled chocolate and beat for another minute. Add the cocoa powder, confectioners’ sugar, salt, and vanilla extract and mix on low speed until combined. Add the cream and beat on medium speed until the frosting is light and fluffy, about 3 minutes.

Assemble

Once the cakes have cooled, place one layer on a cake stand or plate. Spread a layer of frosting over the top of the cake. Place the second layer on top of the frosting and spread the remaining frosting over the top and sides of the cake.
