Coconut Celebration Cake Recipe

Ingredients

- 2 cups powdered sugar
- 8 ounces cream cheese, softened
- 1/4 cup butter, softened
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/2 cup sweetened coconut flakes, toasted
Instructions
Cake
Preheat oven to 350°F. Grease two 9-inch round cake pans with butter and line the bottom of each with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda and salt.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, then add vanilla and almond extracts.
Alternate adding the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Stir in coconut flakes.
Divide batter evenly between the two prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let cool for 10 minutes in the pans, then invert onto a wire rack to cool completely.
Frosting
In a medium bowl, beat together powdered sugar, cream cheese, butter, vanilla and almond extracts until light and fluffy.
Place one of the cooled cake layers onto a cake plate or platter and spread frosting over the top. Place the other cake layer on top and spread remaining frosting over the top and sides of the cake. Sprinkle the top of the cake with toasted coconut flakes.
Refrigerate cake until ready to serve.
