Instructions

Cake

Preheat oven to 350° F. Grease a 9x13-inch baking pan. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

In a large bowl, whisk together eggs, sugar, and vanilla extract until light and fluffy. Add the melted butter, and whisk until combined. Stir in the cocoa powder and chopped nuts (if desired). Gradually add the flour mixture to the egg mixture, stirring until just combined.

Pour the batter into the prepared pan and spread evenly. Bake for 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool for 10 minutes before turning out onto a wire rack to cool completely.

Filling

In a medium bowl, beat the cream, sugar, and vanilla extract until soft peaks form. Stir in the chocolate chips and chopped nuts (if desired). Spread the filling evenly over the cooled cake.

Assembly

Carefully roll the cake up into a log shape, starting from one of the short sides. Dust the top of the cake with confectioners’ sugar.

Garnish
