Ingredients

For the cake:

  • 1/4 teaspoon kosher salt

For the crunchy topping:
  • 2 cups crushed cornflakes
  • 1 cup (2 sticks) melted butter
  • 1/4 cup granulated sugar

Instructions

Making the Cake

Preheat the oven to 350°F. Grease and flour two 8-inch round cake pans and set aside. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large bowl, use an electric mixer to cream together the sugar and butter until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the yogurt and vanilla. Add the dry ingredients to the wet ingredients and mix until just combined. Divide the batter between the prepared pans and bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Let cool in the pans for 10 minutes, then turn out onto a cooling rack to cool completely.

Making the Frosting

In a medium bowl, use an electric mixer to beat together the sugar, butter, vanilla, and salt until light and fluffy. Place one of the cakes on a cake stand or plate. Spread the frosting on top of the cake, then top with the other cake. Spread the remaining frosting on the top and sides of the cake.

Making the Crunchy Topping

In a medium bowl, combine the cornflakes, melted butter, and sugar. Stir until the cornflakes are evenly coated. Spread the crunchy topping over the frosted cake. Serve immediately or store in an airtight container for up to 3 days.
